How long could you "disappear" before stuff would start hitting the fan?

Pretty self-explanatory. I feel like my team is in a pretty decent position in that we rarely have fires anymore. We've delegated the lower-level tasks to other teams and automated a bunch of other tasks that used to take ages to do.

If we left I feel like the ship would stay afloat for a few weeks at least before people noticed, but once they did notice it would be pretty chaotic.

We are lucky in that our org breaks things out into departments. We have a networking team, security team and Azure/O365 team and a largeish group of field support.
