Planning a home server not entirely sure what I need

Hello r/selfhosted I am planning out my home server build. I have had a self-built PC for many years now and decided that a home server would be better use of unused parts than selling them. I would like to use my home server for the typical things like remote storage, media hosting, and a VPN but would also like to host game servers like a Minecraft server.

Can you host the normal home server stuff and game servers simultaneously? Also I know many run their servers on Linux but can you host a Minecraft server on Linux? If so what distro is recommended for said use case?

These are the parts I have at my disposal to work with. I have heard that you need a network card for a home server is this true? If so what are the specs you judge a network card by? Most important question is there anything critical to self-hosting a home server that I appear to have overlooked?
