Best tips for new restaurant owners?

I just opened my first food business, deli and sub shop. I have owned other businesses but never food service. Any best practices or good tips from some industry veterans? I can do tons of research but some things are better learned by experience. Thanks in advance

For context: I have no experience in the food industry, I specialize in business ops, web design, SEO, marketing, etc. my business partner has over 5 years restaurant experience. We are in a small town with a unique value proposition. It’s a pretty busy town due to several factories and campgrounds here. We are on the main road that comes in and out of this town. There’s no grocery store except dollar general, 1 Italian restaurant the next town over and a gas station that serves frozen pizza and some other fried food, the nearest town with Walmart and any other modern fast food restaurant/ convenience is 20 or so miles away. There was a business that was similar to ours that has been here for over 30 years, but they sold recently. The new owners took out the deli and turned it into more of a convenience store driving all the business away. We will have no competition.
