where can i buy rainbow ice cream like the ice cream trucks have?

all i want is the same rainbow ice cream/gelati like what the ice cream trucks have. i can’t find anything like it anywhere. it’s not creamy it’s more like a sorbet. i don’t even know what the proper name for it is so i don’t know what to google. please help!
