Satisfactory performance in mid to late game

Several have posted about solid performance at the beginning of the game, but now that I'm in mid-game I'm experiencing a lot of lag or stuttering on my M2 Ultra. It's not that the general frame rate drops, but more that every second or so, the game freezes for a moment. It's becoming unplayable at this stage of the game.

People have said that Satisfactory tends to bottleneck at CPU power, but activity monitor still shows I have plenty of CPU to go around. I'm guessing it's a limitation of Wine or of how many threads it can use.

Anyone have any ideas on how I can improve performance?
