Why can't I stick to the keto diet?

I don't know what to do with myself. I have tried to stick to the keto diet long enough to become fat adapted. I figured that after that, it would be easier to keep it up. I can't even go a few days without having a high-carb meal. It's not like I can change my environment since I work as a personal shopper at Walmart and I live with my mom who has no interest in cutting carbs. All I have to go on is willpowet, but that's not nearly enough. What do I do?
