Any vegans here?
Me neither, but my partner is a vegetarian and im spitballing ideas here.
So its actualy totaly decent with this teriyaki and black mustard seed combo. Garlic salt and chives as a supporting act. My vegetable peeler gave a good ribbed texture. 4 hours at 70C obviously it tastes very much like aubergine but a satisfying and presumably much lower calorie option.
I am intending on soaking slices in smoked aubergine or perhaps reconstatuting smoked/burnt aubergine into leather. This vegan jerky has massive potential, its just not quite good enough.
