Do you develop a scent pallet over time?

I'm a chef. I just got into fragrances. In my work experience, there have been many flavors, many ingredients that I didnt like, but learned to appreciate and enjoy through consistent exposure, contemplation, and of course good preparation.

With scents I have enjoyed greatly going to the department stores and spray sampling dozens of frags at a time. I end up only liking 1 out of 10 I try, and I'm realizing I'm attracted to the blue/fresh profile

Does your appreciation for frags broaden over time, or do people typically like what they like?
