Which round of 16 matches should I watch?

I’m an American who’s new to football and doesn’t know many teams outside of the Prem or the giants of Europe (Madrid and Barca, PSG, Bayern, etc). I’m not a fan of any of the teams since no USA stars are left, which matches will be the best?
