Can I really do couch to 5k?!

I am a super duper beginner (like, I ran 1 5k 10 years ago and haven't done it since). I am 40/f, 135lbs, mostly in OK shape. I work 12+ hour shifts on my feet, so I'm not a total couch potato.

I just signed up for a 5k that is 7 weeks from today. I am in recovery from alcohol and need to find a hobby/something physical to do. In recovery, I have found that for anything I need to make specific, measureable goals, so this 5k is going to be mine. It also happens to be a few days before my 41st bday!

I am just curious as to whether the apps/plans REALLY do work? Can a total beginner go from literally never running, to completing a whole 5k?

Need encouragement, tips, tricks & also recs on the best app to do this. I am on android and have a Samsung galaxy watch. I've done some research but not sure which one will be really helpful. Customizable would be great (as in number of weeks - many of them seem to be 8-10 weeks long).

I plan to start day 1 tomorrow.
