How Do I Cleanly Turn While Locked On?

Bit of a newbie fan here. This past year I've played AC3, 4, 5, 0, and recently finished 7 and just picked up 2.

Whenever I look up videos of AC7 I see people cleanly turning/pitching their noses to face whatever it is they're targeting while holding the lock on button, especially in dogfights. Meanwhile I only ever use it to get a bearing where my target is before turning, and I've tried turning while locked on and it only results in me fumbling the plane, largely going where I don't want it to go.

So anybody have advice on how to properly do this?
