Can someone please help me out with baked potatoes?

There have been a few posts recently with baked potatoes and beans and I'm absolutely here for it.

What I would like to know is what cooking method gives you the fluffiest inside with the crispiest skin?

Currently I stab the potato all over with a fork the blast it in the microwave for 7 to 8 minutes, followed by a coating of oil and salt then 20 mins in the fan oven at 180°c to finish it off.

Anything I'm missing/could do better? Sometimes I feel it could be fluffier and/or crispier!

Ps - also acquired an air fryer today which I'm about to attempt chips in for the first time!
