Overnight Brisket - First Brisket On The Traeger
Prepped and trimmed a small prime brisket yesterday before I went and ruptured my Achilles tendon playing soccer. No choice but to throw it on at midnight as originally planned. Salt & pepper with a yellow mustard binder, 6 hours on smoke setting, foil boat after for 4 hours at 250. Poured some of the rendered fat into the boat during final cook. Wrapped in butcher paper and rested in the cooler for three hours. The point nearly fell apart in my hand lifting it off the grill. Can't even eat it now because I am about to head into the surgery. The nibbles I had were amazing!!!!
