Putting on weight … go-tos for easy eats?

45, almost 46. 5 ft 3 in and up to 106 lbs. lost 20 lbs a few years ago post-divorce (quit drinking plus stress plus executive function issues) and trying to get some of it back. Switched from running to Pilates maybe 8 months ago and now adding weights because all of my friends’ moms are frail and I want to get ahead of things as I sail firmly into middle age. BUT I have executive function issues that make eating hard. I have to fight to remember to do it and then make myself do it even when the idea isn’t pleasant. I don’t count calories or macros but looking for easy-ish ways to cram some calories into my face. Please don’t say hard boiled eggs 😂
