help with the master angler quest

For "The Master Angler" I need to get a Wisent skull. I killed and skinned one, but I still don't have it. what do I do?

I just installed the Heir update, which has been mostly fine so far, but I cannot figure out how to get the Wisent skull Roland wants. Any help?
