Tony Stark, and any of his Variants seen in What If...?, existing in mere offshoots of 616, are a facade. In any other Universe, whether it be 838, Fox verse, or in anything not following He Who Remains plan, Stark doesn't exist, and it's Dr Doom Who exists.
Tony Stark as a biological human being never existed. He's just an adopted Doom forced to follow the path of Iron-Man according to He Who Remains script for the Sacred Timeline. It's the EXACT reason Strange sacrificed him.
In Infinity War, Strange viewed over 14 million different outcomes in which the heroes would SAFELY, I repeat, SAFELY win the Conflict. I involves absolutely minimizing the potential for any future Conflict as well. Strange, by the virtue of seeing so many different timelines and probabilities, might have come to discover Tony's true origin. He might come to know who he actually is, what he's done in different timelines, and the potential for destruction he is capable of.
With regard to his intelligence, Stark would surely have figured out the Multiverse and got to know his true origin of being Doom, and his stature of being a fearful tyrant, so much so, that even Kang, quite literally the one controlling Multiversal time, did his best to eradicate Doom by virtue of creating the Sacred Timeline. Strange here, eradicated any possibility of ANY form of threat in the future by taking out both Thanos and Doom together in a single conflict.
The plan was more or less successful, with the only outlier of the Avengers botching the Time Heist, Loki escaping, and the domino effect of Sacred Timeline's destruction.
