Best place to buy Japanese knives?

I love good cutlery and have a couple of Japanese knives. This is my first trip to Japan and I’m looking to buy a nice, quality, but not outrageously expensive chefs knife or perhaps sushi bocho / yanagiba. Visiting Tokyo, Osaka, and Kyoto. Shops and knife recommendations appreciated. (Budget <$200 USD )
