Two nights in Athens...food & nightlife outside tourist area for middle of the week

Hi I have been in Thessalonikis and will be in Athens (near Acropolis) for two nights before flying back to the U.S.

Unfortunately I will only be here on a Tues & Wed night so most of the suggestions I've seen for nightlife don't apply as them seem to only be good or open on weekends. I also see that most are suggesting to get authentic Greek food from outside the central Athens areas for freshness.

I am a single male in my mid 30's. I wouldn't mind something along the lines of rooftop bar/lounge, live music, or anything worth checking out that could be good middle of the week. Doesn't have to be a party but something that maybe I cant experience in a "Greek restaurant" back in the U.S.

Food wise I am open to going not too far out from Athens for some authentic vegan food. If there is somewhere that has amazing locally sourced seafood or even fresh Lamb, i'd break my vegan diet to try that. Any recs help
