What are your most fun builds?

I recently got Elden Ring for Christmas, and built my intellligence build like ive done in other Souls based games. Its fun, but im at a level where I no longer get summoned for boss fights and thats one of the things I like to do. I see a lot of potential in incantations with a faith build and see a lot online how bleed is overpowered. At this point, I want something fun to play while still having the Elden Ring challenge to it. What are your recommendations to have fun solo and in multiplayer PVE?
