Braising ribs in coconut milk, will the sauce separate?
Have some pork spare ribs and was going to brown them and then add some liquid to braise it slowly for 2+ hours, until tender. Then would reduce the liquid into a sauce
I kind of wanted to use Thai curry paste and coconut milk, and have the ribs braise in that, but was concerned that braising in coconut milk for that long would cause the sauce to separate or curdle or something. Does anyone know if it would work out?
