Sharing my experience to hopefully help others with IBS from Celiac.
I've been Coeliac my whole life, discovered it when i was 21, now 28. My gut was so damaged I was having terrible reactions to even non-gluten foods (in particular FODMAPS), causing severe IBS and being very anxious to eat every meal for 5 years, worried about how i'd react. It was debilitating for a long period of time.
After lots of struggle, this is what has worked for me. It started with taking anti-depressants, I assured my doctor that my mood was fine and didn't need them but she said that these can help. I did see about a 20% improvement from this point. Note the type of depressant matters. I then also started to cut Fodmaps and processed food down a lot, (I had tried this before but didn't see much improvement).
At the same time I saw a documentary saying humans should be getting 50g of Fibre a day rather than the recommended 30g, so I drastically increased my fruit and veg intake, healthy fats and lowered my carbs. After about a month, i'm the best I've felt in about 10 years, I have reintroduced Fodmaps again as well as a low amount of processed foods here and there, and reactions are down to about 5%.

To summarise
- Obviously no gluten at all
- Small dose of Anti-depressants
- Cut down Fodmaps initially (Can reintroduce later)
- Increase Fibre Significantly to 50g+ (Lots of quick ways to do this)
- Increase healthy fats
- More probiotic and prebiotic foods
- Reduce carbs and processed food
Note: I also increased my protein slightly just because i reduced carbs but doubt that contributed to anything.
