Is there something useful I can make with almost raw lumber?

I've recently gotten into chainsaw milling and I now have several piles of freshly milled 1" (2.5cm) birch, maple, and sweet cherry lumber. Some of them are sitting for two months, some for two weeks, some for two days. My hands are itching, I want to make something out of them, I can't think of waiting for a year until I can start making use of them. Is there anything nice and useful that can be made out of freshly milled lumber that would also help me gain some woodworking skills? I'd love to make some rough outdoors furniture, but I've read that the lumber needs to be seasoned even if it's gonna stay outside. I've also read that it's okay to carve fresh lumber, but I'd rather make some furniture than kuksas.
