Chefs salarised pay calculation

So I am a chef of about 15 years experience. I have been working as a head chef for the last 3 years. Recently the apprentice I have just qualified and his salary pay calculations have brought to light how messed up the hospitality industry is and why the chefs are leaving hospitality in droves.

His salary comes to just over $67,000 which is the award weekly rate multiplied buy the additional 25%.

From what I understand after going through the fairwork website, salarised wages are supposed to include penalties for working weekends so his salary should actually be about $77k. We close mondays and tuesdays, so we work every weekend.

Calculation: Level 4 - cook grade 3 (tradesperson) COMMIS CHEF Hourly rate: $27.17, weekly: $1032.30

Saturday rate: $33.96 × 7.6 hours = $258.12 Sunday rate: $40.75 × 7.6 hours = $309.73

Wed, Thur, Fri: $27.17 × 7.6 hours × 3 days = $619.47

1 weeks pay: $258.12 + $309.73 + $619.47 = $1187.33

1 weeks pay salarised = $1187.33 × 1.25 = $1484.16

Annual wage salarised = $1484.16 × 52 weeks = $77176.39

Can anyone help go over my calculations, I must be way off somewhere. I must be missing something because there is noone out there paying 77k for a commis chef. If its true ill quit my head chef job and go back to being a commis chef haha.
