Help re: Choosing to end GPU hell

Hi All I'm a long time sim player BUT console and with wheel only..... I recently got ACC for PC and now I feel the same rush as I did my first lap of Gran Turismo on the first playstation. And even though I'm sure there's some eejits in this sub but people on it are sound. Makes a change from the PS subs.... Toxic as Twitter Anyhoo.... At the moment I'm using a gaming laptop

ROG Zephyrus GX501GI Processor Intel(R) Core(TM) i7-8750H CPU @ 2.20GHz 2.21 GHz Installed RAM 16.0 GB NVIDEA GeForce GTX 1080 with Max-Q Design 1 TB SSD

Now it runs the game but not always smoothly. I should mention that even though I work in IT, because of being a console player, I know nothing about GPUs I'm about to sell the laptop to fund a gaming PC with a beefier GPU. Off I went to look for one and.... Yeah.... Thats a lot of different things that all look the same. My question is, as I'm about to upgrade the screen to an Ultrawide, what GPU and or CPU would have enough juice to run the game smoothly on it? (I know the real high end stuff and it's outta price range)
