Z offset randomly changes on start of print

[ender 3 neo]Every single time I try printing anything, my z offset changed from around -3.150 to -5 something, I level the bed every print but that’s about it. The nozzle has started digging into my build plate and I’m not even sure if filament is coming out. I have no clue how to fix this please someone help me
